Mexican Wrap


1 pack taco rice cooked according to package directions (plus 1/4 c thawed frozen peas and 1/4 c water)

sliced cucumber

marinated mushrooms chopped and marinated in soy sauce and olive oil plus pinch cumin)

chopped small grape tomatoes

1/2 nori sheet

mexican salsa (paci – picante) or a make your own salsa

Chipotle Sauce

any tortilla wrapper of your choice

spring mix salad greens


Make the rice (boil with water , peas and oil) and cool slightly

Put the tortilla on top of the table with the nori sheet.

Put chopped cucumbers, tomatoes, and rice on top of the nori sheet

Put the mushrooms on top

Put the spring mix salad greens

Pour the salsa

Pour the chipotle sauce ( either raw cashew base or taco bell brand)

Fold the tortilla wrapper on the side and roll it away from you tucking in as you go. Serve with chipotle sauce on top


Chipotle Sauce:

1 c cashews soaked

3/4 c water

1/2 tsp chipotle powder

1/2 tsp spanish paprika powder

1/2 tsp onion powder

1/2 tsp garlic powder

salt and pepper to taste

Blend in a powerful blender. Use with the wrap.
