Cauliflower Nori Rolls

2014-06-11 21.23.18Note: We had both rice and cauliflower nori but the rice i did was seasoned with soy sauce and sesame oil plus 1 stevia packet

Cauliflower Nori Rolls

Cauliflower Rice:


2 head cauliflowers (only florets used, stalks removed) chopped finely

1 c cashews

2 T nutritional yeast

2 T ground yellow flax seeds

salt to taste (the soy sauce dipping sauce will also give flavor so take it easy on the salt)

5 c water (to boil the cauliflower)

1 tsp garlic


1 T psyllium husk

mint leaves to taste

Extra ingredients:

romaine lettuce for rolling

red bell pepper julienned  for filling

cucumber strips for filling

avocado slices for filling

Toasted Nori


Boil the cauliflower

Drain and pat dry with a paper towel

Refrigerate to cool first

Process the cauliflower in the food processor briefly

Add all the remaining ingredients in the food processor

Process but  stop before it gets mushy

Adjust seasonings.

Set aside.

Make a Dipping sauce:

soy sauce

pinch wasabi or to taste


Set aside.

Prepare the Nori Roll

Put the nori mat on the table

Put the nori on top

Put the romaine lettuce
