Sushi Rice:

3 c Morelos Rice (Mexican rice)

7 1/2 c water


Boil water, wash rice and drain

Add rice to boiling water

When water evaporates – about 10 minutes – close lid and turn the heat into low – – about 20 minutes -or until done.

Empty onto a wooden bowl or big huge wooden board

Add the rice seasoning


Rice is ready. Set aside

Make rice seasoning


1/2 seasoned rice vinegar + 2 tsp agave nectar+ 1/2 tsp salt

Mix together. Set aside.


Spicy Soy Celery Carrots Filling

3/4 c vegetarian mayonnaise
1 c minced celery (or food processed for fine texture but not so fine)
1 c minced carrots (or food processed for fine texture but not so fine)
1/2 tsp salt fine

1/2 tsp ground black pepper

1/2 tsp chipotle powder
3 Tbsp finely minced red onions
1 1/4 c soy meat saute

Mix until well mixed
Set aside. This will be the spicy soy filling

Soy Meat Saute:

In a separate pan,
1 pack veg ground soy meat (yves brand) –
4 T red and yellow peppers deseeded chopped finely
1 Tbsp soy sauce
2 Tbsp kechup


Veggie Strips Filling:

Julienned Red pepper

Sliced cucumber – strips

Sliced avocados


How to Roll the Nori:

Put the nori sheet (1/2 size) on the sushi mat

Add enough rice (about 1/2 c) to cover the sheet

Spread the rice throughout the nori sheet

Add 1/4 tsp black sesame seeds

Invert the sheet – so that the rice is under the nori sheet

Put some julienned cucumber

Add about 1 and 1/2 Tbsp spicy soy filling – spread on the nori sheet


Cut as desired

Tips :

wet your hands with water (optional- with a little vinegar) – do not dry – when working on the rice

Wipe the sharp knife  (has to be sharp – or else it will be difficult to cut the nori rolls) before cutting everytime to get a clean cut.

Serve on a plate with soy sauce, pickled ginger and wasabi
